A fresh veal carcass. Choose a half carcass or whole carcass. Each half carcass consists of a whole shoulder, a whole leg, half of the saddle (with the filet) and a breast with rib. We offfer 2 types of veal carcasses. The white veal and the Rose veal.
White veal is 8 months old, mainly milk fed and has white coloured meat.
Rose veal is maximum 12 months old, mainly roughage fed and has pink coloured meat.
